Each year thousands make a major lifestyle change and start to eat gluten-free. The reasons why vary. Some think it’s a healthier way to live while it becomes a necessity for others who have been diagnosed with celiac disease. In the beginning it may seem like many of your favorite foods like breads, cakes and cookies are now on the forbidden food list. Thankfully there are many gluten-free options available now along with lots of gluten free recipes. Here’s one of my favorites, for a delicious gluten free oatmeal cookie.
Gluten Free Oatmeal Cookies
* 1/2 cup margarine
* 1/2 cup brown sugar
* 1/4 cup sugar
* 1/2 tsp vanilla
* 3/4 cups gluten free flour
* 1/2 tsp baking soda
* dash of table salt
* 1/2 tsp cinnamon
* 1 large egg
* 1/2 tsp xanthan gum
* 1 1/2 cups gluten free oats
* 1/2 cup raisins (you can leave these out)
Preheat the oven to 350 Fahrenheit. Set out the butter or margarine so it has a chance to soften. Using a handmixer, combine the butter and both the regular and brown sugar in a large bowl. Next it’s time to beat in the egg and vanilla. Be sure to keep mixing until everything is smooth and well combined.
Get out a bowl and add the flour, cinnamon, baking soda, xanthan gum and salt. Stir it together until well combined, then work the flour mixture into the butter and egg one. Finish the batter by adding the oats and raisins and mixing everything together.
Scoop one tablespoon of batter onto a greased baking sheet per cookie. Keep working until you have your cookie sheet filled up. Using tow large spoons or a melon baler works well to scoop out the batter.
Bake the cookies for 10 to 12 minutes. They will be golden brown when they are done. Allow them to cool first directly on the baking sheet and then on a rack. Keep them in an airtight tin if there are any leftover.
This recipe yields two dozen oatmeal cookies.
Of course you don’t have to bake all your cookies and other gluten-free treats from scratch. You can get all kinds of baking mixes and even finished gluten free products at local grocery stores and online at websites that specialize in gluten-free products. They are a great alternative. There are even some premade cookies that you can purchase that taste pretty decent.
In short, you do not have to give up on your favorite treats when you have to switch to eating gluten free.
